Not that Champagne needs any dressing up, but this classic adds another level of sparkle by dropping a sugar cube flavored with a few dashes of bitters into a flute glass before filling it up.

Soak a sugar cube with 2 or 3 dashes of bitters. Drop the sugar cube into a flute. Add 3/4 ounce brandy, if desired. Top with sparkling wine.
