Ingredients

1 stick unsalted butter, softened

1/3 cup granulated sugar

1/3 cup packed light brown sugar

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup yogurt chips

1/2 cup diced fresh strawberries

Directions

  1. Beat the butter, granulated sugar and brown sugar in a bowl with a mixer on medium speed until fluffy. Add the egg and vanilla; beat.
  2. Whisk the flour, baking soda and salt in a bowl. Add to the butter mixture and beat until just combined. Stir in the yogurt chips and strawberries.
  3. Preheat the oven to 350 degrees F. Scoop rounded tablespoons of dough and roll into balls. Arrange on parchment-lined baking sheets about 2 inches apart. Refrigerate 30 minutes, then bake until the cookies are golden on the bottom, 12 to 15 minutes. Cool on the baking sheets, 10 minutes, then transfer to racks to finish cooling.

I used chocolate chips instead of yogurt chips and put more strawberries. This made the cookie dough very hard to stick together because too many strawberries. I will pull back to the 1/2 c next time. Also, by accident, I used baking powder instead of baking soda. So the cookies were fat. Still very good but would like to try the recipe as it is with just chocolate chips subbed next time.
