Hot Ginger Toddy

Ingredients

4 to 6 ounces top shelf bourbon

2 ounces honey

1 ounce Ginger Syrup, recipe follows

1 ounce freshly squeezed lemon juice

Ginger Syrup:

1 lemon

2 cups coarsely chopped fresh ginger with peel, about 8 ounces

1 cup sugar

Directions

  1. Heat whiskey, honey, ginger syrup, and lemon juice in a small saucepan until honey dissolves and liquid is hot, but not boiling. Pour into a large snifter or mug. Serve.

Ginger Syrup:

  1. 1. Cut peel from lemon (avoid pith) using a vegetable peeler. Place ginger and lemon peel in food processor and finely chop.
  2. 2. Transfer lemon-ginger mixture to a medium saucepan, add sugar and 2 cups of water and bring to a boil. Reduce heat and simmer, partially covered, for 15 minutes. Strain mixture and cool. Cover and refrigerate for up to 1 week.

This was good, I especially like the ginger syrup. But wow, it's so lip-puckering! Usually a hot toddy has some water added to it and I personally think this recipe should be no exception. Also, is this supposed to make one drink only? 4-6 oz of bourbon is a huge amount! I make my toddies with 3oz and they're strong, so something is wrong here...I cut the alcohol down to 3oz and added about 4oz of hot water. I also cut the honey to 1oz...I felt that 2oz was overboard. After that, it was tasty. I was looking for something to zing up my toddy and ginger was the key! Maybe this recipe is for two people? Anyway, try my adjustment if you'd like :)
