Directions

  1. Whisk 3 tablespoons olive oil, 2 tablespoons each white balsamic vinegar and chopped chives, 1 teaspoon dijon mustard, 1/4 teaspoon sugar and a pinch of salt in a large bowl. Cut 2 peeled kohlrabi and 1 large Granny Smith apple into matchsticks. Add to the dressing along with 3 tablespoons roasted salted sunflower seeds. Season with salt and pepper and toss.

Loves nature

What a great way to get a healthy, low glycemic, cruciferous vegetable (kohlrabi) into a tasty salad. I loved the balance of the sweet apple to the crunchy kohlrabi, all enhanced by the dressing. There's a lot of tasty crunch/texture to this salad which makes it a great change. This is a keeper. Thanks FN.
