Melon-Kiwi Salad with Coconut Yogurt

Coconut milk based yogurts have become readily available in almost all supermarkets, and for good reason. They offer a non-dairy alternative, and the yogurt itself has a rich texture with the slightest hint of coconut flavor in each bite. This coconut yogurt drizzle contains honey, vanilla bean paste and lemon for a slightly sweet and floral quality that pairs perfectly with the juicy melon and kiwi.

Ingredients

1/2 cantaloupe, halved, peeled and cut into 1/2-inch-thick slices

1/2 honeydew melon, halved, peeled and cut into 1/2-inch-thick slices

4 golden kiwis, peeled and thinly sliced

8 ounces plain unsweetened coconut yogurt

1 tablespoon honey

1 teaspoon finely grated lemon zest, plus 2 teaspoons lemon juice

1/2 teaspoon vanilla bean paste

Toasted coconut flakes, for topping

Directions

  1. Arrange the cantaloupe, honeydew and kiwis on a large platter.
  2. Combine the yogurt, honey, lemon zest and juice and the vanilla bean paste in a small bowl and whisk until smooth. Dollop or drizzle the yogurt mixture over the fruit and sprinkle with the coconut flakes.
