Orange Peel Campfire Brownies

S'mores have some competition-- foil packs of brownie-filled oranges you can cook in the coals of your campfire. Pack some spoons and dig in.

Ingredients

1 cup sugar

1/2 cup all-purpose flour

1/2 cup semisweet chocolate chips

1/3 cup unsweetened cocoa powder 

1/4 teaspoon baking powder 

1/4 teaspoon kosher salt

6 oranges, cut in half 

1/2 cup vegetable oil   

2 large eggs   

Directions

Special equipment:
heavy duty aluminum foil
  1. Combine the sugar, flour, chocolate chips, cocoa powder, baking powder and salt in a large heavy duty resealable bag at home.
  2. At the campsite, scoop out the inside of the orange out being careful not to puncture the peel. Add the oil and eggs to the bag with the flour mixture, reseal and squish around until well combined. Fill each orange about 2/3 of the way and wrap twice in heavy duty aluminum foil.  
  3. Put in a bed of coals, cut side up, and cover with more coals. Cook until the batter is set, 20 to 25 minutes, depending on the heat of your coals. 
  4. Remove from coals and let sit a few minutes to cool.
