Peanut Butter and Strawberry Campfire Bites

If you're a peanut lover, s'mores lover or simply a dessert fan, this easy campfire treat is for you. We dunk fresh strawberries into a tasty mix of peanut butter and marshmallow, then roll them in crushed honey-roasted peanuts before charring them over a fire. A quick dip in melted peanut butter, milk chocolate or both—why choose! —is the perfect ending. This dessert works equally well with thick wedges of apple. Go for sturdy wooden skewers since the fruit tends to slide around on metal ones.

Ingredients

1/2 cup smooth peanut butter

One 7-ounce container marshmallow creme

1 cup honey-roasted peanuts

Two 1.5-ounce milk chocolate bars, broken into pieces

1 quart strawberries, hulled and thoroughly dried

Directions

Special equipment:
6 to 8 sturdy wooden skewers
  1. Build a campfire.
  2. Mix 1/4 cup of the peanut butter into the container of marshmallow creme until well-combined.
  3. Coarsely crush the honey-roasted peanuts in a resealable plastic bag using a heavy object like the back of a soup can or a cast-iron skillet, being careful not to puncture the bag. Open the bag and place it on a flat surface or plate.
  4. Add the remaining 1/4 cup peanut butter to a small heatproof bowl or pot and set it near the fire, stirring occasionally if needed, until just melted.
  5. Put the chocolate in a medium heatproof bowl or pot and set it near the fire, stirring occasionally if needed, until just melted.
  6. Meanwhile, skewer a strawberry through the hull so it is firmly on the stick. Dip the strawberry into the marshmallow creme mixture, patting on the mixture to ensure it sticks (it does not have to be fully coated). Lightly roll in the honey-roasted peanuts. Hold over the fire and cook until the marshmallow mixture and peanuts are lightly charred in spots, about 30 seconds. Dip in the melted peanut butter or chocolate (or both!) and enjoy immediately while the strawberry bites are nice and warm. Repeat with the remaining ingredients.
