Directions

  1. Whisk 3 tablespoons white wine vinegar with 1/2 teaspoon crushed anise seed, salt and pepper in a serving bowl, then slowly whisk in 1/3 cup olive oil. Add 1 thinly sliced fennel bulb, 2 thinly sliced pears and some parsley; season with salt and pepper and toss. Top with shaved pecorino.

I have made this salad several times because it's easy, refreshing, and delicious. The first time I made this, I served it with FNM's Stuffed Shells Bolognese and Crostini with Ricotta, Marmalade and Pistachios. This last time I served it with whole-wheat spaghetti with Italian sausage and fennel. Like dorypoway below, I love orange and fennel salad, but this is a nice change of pace.
