Frozen Ravioli Croutons

Ingredients

Canola oil, for frying

1/2 cup all-purpose flour 

Kosher salt and freshly ground black pepper

2 eggs, beaten 

1/2 cup breadcrumbs 

1/2 cup panko breadcrumbs 

One 13-ounce package frozen mini cheese ravioli 

Directions

  1. Heat 1 inch of canola oil in a heavy-bottomed pot over medium-high heat until a deep-fry thermometer registers 365 degrees F.
  2. Set up a breading station: Place the flour with 1 teaspoon salt and 1 teaspoon pepper in one baking dish, the eggs in another and the breadcrumbs, panko and another 1 teaspoon salt and 1 teaspoon pepper in a third dish.
  3. Toss the ravioli in the flour to coat, then in the egg wash and finally in the breadcrumbs so they are fully covered. Add the breaded ravioli to the oil and fry in batches until they are golden in color, about 2 minutes. Sprinkle with a pinch of salt after frying and add to your favorite salad or soup!

This looked like a yummy update for a Caesar. One question: Do you thaw the ravioli first or batter and fry frozen? Ingredient list says 'frozen' and steps don't indicate. Help me out GZ! : )
