Black Forest Overnight Oats

Overnight oats are the perfect solution to starting your busy morning on the right foot. The combination of cherries and cocoa is inspired by a traditional Black Forest cake, creating richness and sweetness without adding too much sugar. A dollop of yogurt adds a little extra protein and a creamy texture.

Ingredients

1 cup unsweetened plain almond milk

6 tablespoons almond butter

3 tablespoons cherry preserves

3 tablespoons cocoa powder

4 teaspoons maple syrup

1/4 teaspoon almond extract

1/8 teaspoon kosher salt

1 cup old-fashioned rolled oats

1 cup frozen dark sweet cherries, thawed and diced

Two 5-ounce containers plain Greek or coconut yogurt

Grated dark chocolate, for garnish, optional

Directions

  1. In a large container with a lid, combine the almond milk, almond butter, preserves, cocoa powder, maple syrup, almond extract and salt. Stir in the oats. Refrigerate overnight until set.
  2. Stir the oat mixture, then divide among four 8- to 10-ounce jars or glasses, layering the chopped dark cherries with the overnight oats. Top with the yogurt and grated chocolate, if desired.
