Grilled Stuffed Oysters

Ingredients

1 teaspoon dried ancho chile powder

1 teaspoon dried guajillo chile powder

1 teaspoon garlic powder 

1 teaspoon sea salt 

1 cup shredded Monterey Jack cheese 

1/2 cup chopped onion 

1/3 cup blue crab meat 

1/3 cup chopped cooked Spanish octopus 

1/3 cup chopped boiled shrimp 

1/4 cup chopped fresh cilantro 

1/4 cup chopped jalapeno 

1 dozen oysters on the half shell 

Directions

  1. Preheat a grill for high heat.
  2. Mix the ancho and guajillo chiles, garlic powder and salt in a bowl and set aside. Combine the cheese, onion, crab, octopus, shrimp, cilantro and jalapeno in a bowl, then add the seasoning mix. Top the oysters with the stuffing. Put the oysters on the grill and cook, covered, until cooked through, 4 to 5 minutes.
