Guacamole

Ingredients

2 ripe avocados, peeled, pitted

1 teaspoon salt

2 tablespoons (30 ml) lemon juice

1/4 cup (40 g) chopped red onion

1 medium tomato, halved

1/2 cup (10 g) fresh cilantro leaves

Directions

  1. 1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. 2. Select Variable 1.
  3. 3. Turn machine on and quickly increase speed to Variable 3.
  4. 4. Blend for 15 to 20 seconds or until ingredients are mixed.
  5. 5. If necessary, use the tamper to push the ingredients into the blades while processing.
  6. 6. You may need to stop the machine and run a spatula around the inside of the container to integrate ingredients.
  7. 7. Do not over mix. Leave chunky. Serve with tortilla chips.

WAY too much salt! That's the only reason this is 4 stars instead of 5. Next time I will add the salt as needed; I spent a lot of time trying to cut the salty taste, by adding more lemon juice and adding some pepper...eventually it was delicious! And it's so simple - I didn't even use a blender, just used a fork to mash everything up.
