Watermelon Cosmopolitans

Ingredients

4 cups (3/4-inch) diced red watermelon

6 ounces good vodka, such as Grey Goose

3 ounces Cointreau or Triple Sec liqueur

2 ounces freshly squeezed lime juice (2 limes)

4 large mint sprigs, for garnish

Directions

  1. Place the watermelon in a food mill fitted with the largest disc set over a medium bowl and process. The food mill will separate the seeds and the pulp from the juice; you should have about two cups of juice. Pour into a pitcher and discard the seeds and pulp. Stir in the vodka, Cointreau, and lime juice.
  2. Fill a cocktail shaker half-full with ice, pour in the cocktail mixture, and shake it for a full 30 seconds. Pour into chilled martini glasses and garnish each glass with a sprig of mint. Serve ice cold.

Newport Foodie

This was delicious! I used a food processor and blended the watermelon in batches so it didn’t overflow. Then strained in a colander. Also, doubled the recipe, made the whole mix about 2 hours ahead and put in a pitcher in the fridge-good timesaver. When guests arrived shook with ice and served up-everyone loved!
