Chipotle Mayo and Blue Corn Tortilla Chips Corn on the Cob

Ingredients

6 ears corn, shucked

1/2 cup prepared chipotle mayo 

1 cup crushed blue corn tortilla chips 

Lime wedges, for squeezing

Directions

  1. Prepare a grill for medium-high heat.
  2. Grill the corn, turning every 3 to 4 minutes, until it starts to char, about 12 minutes.
  3. Spread the chipotle mayo over the corn. Roll in the crushed corn chips and finish with a squeeze of lime juice.

Tried Jeff’s corn on the cob today, it is very good.  We had the corn with BLT’s. I took the left over blue corn chips and sprinkled them over the top of my BLT to crunchify them!  Amazing!😋
