Sweet and Sour Pulled Chicken Sandwich

Ingredients

1/4 cup hoisin sauce

1/4 cup sweet chili sauce 

2 tablespoons low-sodium soy sauce 

2 tablespoons mirin 

1 teaspoon minced fresh ginger 

1/2 teaspoon toasted sesame oil 

2 cups pulled rotisserie chicken 

4 Hawaiian sweet rolls, sliced

Butter, for toasting the rolls

Pickled Broccoli Slaw, recipe follows

1 jalapeno, thinly sliced 

Pickled Broccoli Slaw:

One 12-ounce bag broccoli slaw

1 cup white vinegar 

1/4 cup sugar 

1 teaspoon kosher salt 

Directions

  1. Combine the hoisin, sweet chili sauce, soy, mirin, ginger and sesame oil in a small pot. Bring to a gentle simmer, lower the heat and cook about 5 minutes. Add in the chicken and toss to combine.
  2. Meanwhile, toast the rolls in a skillet with a little butter until golden brown.
  3. Divide the chicken mixture among the bottom rolls and top with some Pickled Broccoli Slaw and sliced jalapeno. Add the top rolls and serve.

Pickled Broccoli Slaw:

  1. Put the slaw in a medium heatproof bowl.
  2. Heat the vinegar, sugar, salt and 1 cup water in a small pot until boiling. Add the hot vinegar mixture to the bowl with the broccoli slaw. Let cool on the counter. Transfer to a resealable container and store in the refrigerator.

The sweet flavoring of the broccoli slaw and the sauce mixture for the chicken went perfectly together. I did also put the Hawaiian bread on a buttered skillet which gave a ton of flavor as well. I made a side of cheesy potatoes and some applesauce on the side. My family was very happy!
