Jerk Pork Spareribs

Ingredients

1 cup ketchup

1/2 cup soy sauce 

1/3 cup barbecue sauce 

1/3 cup minced fresh rosemary 

3 tablespoons granulated sugar 

1 tablespoon paprika 

2 teaspoons ground cloves 

1 teaspoon allspice 

1 head garlic, minced 

1 to 3 habanero chiles (depending on desired heat level), minced 

Handful fresh cilantro, minced 

Salt and black pepper  

1 rack spareribs 

Directions

  1. Combine the ketchup, soy sauce, barbecue sauce, rosemary, sugar, paprika, cloves, allspice, garlic, habaneros, cilantro, some black pepper and 1 tablespoon salt in a large bowl. Add the spareribs, turning to coat. If time permits, cover and marinate for 1 hour.
  2. Preheat the oven to 325 degrees F. Transfer the ribs to a baking sheet and bake for 1 hour 45 minutes.
