Hawaiian Shaved Ice

I recently went on a trip to Hawaii and fell in love with their shaved ice dessert. What makes Hawaiian shaved ice special is that they use thinly shaved ice, rather than crushed, which makes it powdery and snow-like. That texture allows it to perfectly absorb the flavors of the tropical syrups, and the addition of sweetened condensed milk on top makes it feel luxurious! This at-home recipe uses a food processor to achieve a consistency close to the original.

Ingredients

1/3 cup sugar

2/3 cup frozen mango pulp, thawed

1 cup raspberry jam

1/2 cup plus 2 tablespoons hot water

1/2 cup sweetened condensed milk

Ice, for shaving

Directions

Special equipment:
3 squeeze bottles
  1. Heat the sugar and 1/3 cup water in a small saucepan until it comes to a simmer and the sugar dissolves. Turn off the heat and let cool completely. Whisk in the mango pulp, then transfer to a squeeze bottle and set aside.
  2. Meanwhile, whisk the jam together in a bowl with the hot water. Allow to cool completely. Transfer to a squeeze bottle and set aside.
  3. Transfer the condensed milk to a squeeze bottle.
  4. In a food processor that’s turned on, drop the ice cubes in one by one until they have a snow-like consistency. Remove any large chunks. Pile the shaved ice into dishes. Squeeze one syrup over half of the dish of ice and the remaining ice with the other syrup. Drizzle with the sweetened condensed milk to taste. Repeat with the remaining ice and syrups and condensed milk.

Fun and easy treat. But anyone who has been to Hawaii knows it is ‘shave ice’ not ‘shaved ice’.
