Ingredients
2 tablespoons mayonnaise
1 tablespoon minced fresh dill
1 tablespoon freshly squeezed lemon juice
1 tablespoon sweet pickle relish
1 teaspoon Dijon mustard
Flaky sea salt and freshly ground black pepper
One 7-ounce jar tuna in oil, drained very well
2 English muffins, split
4 slices tomato
4 slices American cheese
Directions
- Preheat the oven to 450 degrees F.
- In a bowl, combine the mayonnaise, dill, lemon juice, relish and mustard, then season with salt and pepper. Add the tuna and gently mix with a fork.
- Place the English muffin halves on a baking sheet and bake until lightly toasted, 3 to 4 minutes. Remove from the oven. Top each English muffin with a slice of tomato. Sprinkle with salt. Add a scoop of tuna to each, then top each with a slice of cheese. Bake until the cheese is melted and bubbly, 3 to 4 minutes.
