Couscous with Peas and Mint

Ingredients

1 cup frozen peas

2 cups couscous

3 tablespoons butter

3 sprigs fresh mint, finely chopped

1/2 lemon, juiced

Kosher salt and freshly ground black pepper

Directions

  1. In a medium saucepan over high heat, bring 2 1/2 cups of water to a boil. Add the frozen peas, and boil for 1 minute. Stir in the couscous and butter; turn off the heat. Cover the pan and let rest for 5 minutes.
  2. Add the mint and lemon juice to the couscous and fluff with a fork. Taste and season with salt and pepper, if necessary.

I think the recipe needs to cut the couscous amount in half. Using 2 cups, the couscous came out too dry and it over powered the other flavors. Cutting it down to one cup would probably solve both problems.
