Ingredients

1 pint raspberries

2 tablespoons limoncello, plus more if desired

1 pint lemon sorbet

16 meringue cookies

Directions

  1. Add the raspberries and the limoncello to a small bowl and allow to macerate. Place 1 scoop sorbet between 2 cookies. Top each sandwich with the raspberries and enjoy!

This was a really simple dessert and was very tasty! I did make one change though and used coconut sorbet instead of lemon as I'm a bigger fan of coconuts. Everyone loved it! Next time I will probably put the sorbet in a dish and cruble the cookies on top as trying to eat it the way she set it up got a little messy as it melted. Overall very satisfactory!
