Citrus Syrup for Soft Drinks

Ingredients

3 lemons, zested and juiced

3 limes, zested and juiced

3 Grapefruits, zested and juiced

3/4 cup sugar

1 teaspoon vanilla extract

Pinch salt

Club soda or seltzer

Directions

  1. Strain the citrus juices together into a small saucepan. 
  2. Add the sugar, vanilla and pinch of salt. Heat until a gentle boil is reached. Then add the zest and turn off heat. Allow mixture to cool. 
  3. Strain off the zest and refrigerate until needed. 
  4. Mix citrus syrup with club soda or seltzer to desired strength for flavored soft drink.
