Homemade Berry Granola Parfaits

Ingredients

Granola:

2 cups old-fashioned rolled oats

1 1/2 cups whole almonds 

3/4 cup shredded coconut

1/4 cup vegetable oil 

1/2 cup honey 

Salt

1/2 cup dried cherries 

1/2 cup dried cranberries 

1/2 cup dried pineapple chunks 

1/2 cup maple syrup 

Parfaits:

4 cups plain yogurt

4 cups mixed berries (raspberries, blueberries and strawberries), quartered 

Directions

  1. For the granola: Preheat the oven to 350 degrees F.
  2. Toss the oats, almonds and coconut together on a baking sheet lined with a silicone baking mat.
  3. Whisk together the vegetable oil and honey in a liquid measuring cup, then pour over the oat mixture. Stir until all the oats and nuts are coated. Season with salt to taste.
  4. Bake until golden brown, 40 to 45 minutes.
  5. Remove the granola from the oven and allow it to cool. Add the cherries, cranberries, and pineapple chunks. Drizzle with some of the maple syrup and toss together.
  6. To build the parfaits: Line up eight parfait glasses. Start with a large spoonful of the granola, followed by a layer of yogurt, then a layer of berries and a drizzle of maple syrup. Repeat the layers one more time, finishing with berries, drizzled with maple syrup.

40 minutes was way too long - I had checked it at 20 minutes and thought it looked too soggy. I probably should have pulled it then but gave it a few more minutes - that was a mistake - burnt smell. Will try it again when I replenish my rolled oats supply but will lower the oven temp and maybe use less oil and honey. <br />
