Nancy's Marinara Sauce

Ingredients

1/4 cup extra-virgin olive oil

1 small onion, chopped 

1 clove garlic, chopped 

1 carrot, peeled and finely chopped 

1 stalk celery, chopped 

Sea salt and freshly ground black pepper

One 32-ounce can crushed tomatoes 

1 teaspoon dried oregano 

Directions

  1. Heat the olive oil in a large heavy-bottomed pot over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the carrots and celery, season with salt and pepper and saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and oregano and simmer uncovered over low heat until the sauce has thickened, about 1 hour. Season to taste with more salt and pepper.

I have made this several times- LOVE it<br />Usually cook without recipes but this is an exception. I do sneak in a bay leaf and some red pepper flakes to make it my own. Serving it over roasted spaghetti squash for our meatless meal this week. Thank you Nancy
