Ingredients

4 Earl Grey tea bags

8 cups boiling water

1/2 cup orange blossom water

2 tablespoons honey

1 orange, peel zested in large strips, juiced

1 lemon, peel zested in large strips, juiced

Directions

  1. In a medium saucepan, add the tea bags and water. Steep the tea bags for 3 minutes and then remove them from the pan. Stir in the orange blossom water and honey. Add the juice of the orange and lemon, as well as the peels. Bring to simmer and simmer for 10 minutes.
  2. Serve the tea in warm mugs with pieces of the orange and lemon peel as garnish.

Cook’s Note

The reason we are using orange and lemon is to mimic bergamot, which is the citrus in Earl Grey tea.

I really enjoyed the tea. I scaled down the recipe for one so I ended up using 1 teaspoonful of orange blossom water and a tablespoon of honey (I like my tea sweet) for a large cup of tea (8-10 ounces).
