Yorkshire Pudding Popovers

Ingredients

2 large eggs

1 cup whole milk 

1 cup all-purpose flour 

Salt

Freshly ground black pepper 

1/4 cup warmed reserved beef drippings or melted butter

Directions

Special equipment:
a popover or large muffin pan
  1. Preheat the oven to 450 degrees F.
  2. Place a popover or large muffin pan in the preheated oven for 10 minutes. In a mixing bowl, beat the eggs until they are foamy. Whisk in the milk. Add the flour, salt and pepper and beat just until the batter is smooth.
  3. Pour the beef drippings in the cups of the hot pan, then pour in the batter filling the cups halfway and bake until the popovers are puffy and golden brown, about 30 minutes. Serve immediately.

These are hockey pucks. Burnt hockey pucks. Should’ve realized half an hour at 450 sounded fishy. And no, I didn’t open the oven.
