Pineapple Fried Rice

This recipe is inspired by Hawaiian local-style fried rice with the addition of juicy pineapple.

Ingredients

1 cup English peas

Kosher salt

2 tablespoons sesame oil

2 cups diced canned ham, such as Spam

1 medium white onion, diced

4 cloves garlic, minced

1/2 cup diced carrot

4 scallions, thinly sliced

1/2 cup roasted red pepper, diced

6 cups cooked white rice

3 large eggs

1 1/2 cups diced pineapple

3 tablespoons oyster sauce

6 tablespoons soy sauce

Directions

  1. Plunge the peas into boiling salted water in a small saucepan and cook 1 minute, then drain. Set aside.
  2. Have all the prepped ingredients standing by. Heat a wok or large heavy skillet over high heat. Add the sesame oil and let get hot, then add the ham and allow to caramelize, about 1 minute. Add the onion, garlic and carrot and stir to combine, 1 minute. Add the scallions, roasted peppers and peas, stirring to combine. Add the rice and stir to thoroughly combine. Push some of the rice to the side of the wok and add the eggs directly to the cleared spot. Very quickly, stir to scramble the eggs. Add the pineapple, oyster sauce and soy sauce and stir to combine. Serve immediately.

Simple and delicious. My jarred red peppers were old so I fire-roasted a fresh pepper and used that. I also added a pinch of sugar and MSG to the sauce for added flavor and umami.
