Porcini Carpaccio

Ingredients
4 porcini mushrooms, sliced very thin on a mandoline
Kosher salt and freshly ground black pepper
Extra-virgin olive oil, for drizzling
Fresh lemon juice
Shaved Parmesan, for serving
Directions
- Arrange the mushroom slices on a large platter. Season with salt and pepper, drizzle with olive oil and add lemon juice to taste. Top with a light coating of shaved Parmesan.
