Bacon Wrapped Pineapple Shrimp

Ingredients

12 jumbo shrimp, deveined

1/4 fresh pineapple cut into bite sized chunks or one 14-ounce can pineapple chunks in natural juice, drained

6 slices center-cut bacon, cut in 1/2 crosswise

Directions

Special equipment:
12 wooden toothpicks
  1. Heat a nonstick skillet over medium-high heat. Holding a shrimp, nest a chunk of pineapple in the natural curve of the shrimp then wrap bacon around the shrimp and pineapple and secure with a wooden toothpick. Wrap and secure all 12 shrimp then add to the hot pan and cook 3 minutes on each side or until bacon is crisp and shrimp are opaque and firm.

A quick and tasty bite! In the video, Rachael says to put the seam side of the bacon down in the pan and it will self-seal, eliminating the need for toothpicks, which is enticing. It didn’t work all that well for me—maybe my bacon was too thick?—but half my little jewels came apart and didn’t make for a pretty presentation. Be sure your bacon is thin, or better yet, follow the actual recipe and skewer those little buggers! But the combination of the salty bacon, the shrimp and the sweet pineapple was DELISH!
