Cream Eggs with Irish Cheese and Chives

Ingredients

2 tablespoons butter, cut into small bits

8 large eggs

1/3 cup heavy cream, eyeball it

Salt and pepper

1/2 pound farm house Cheddar, shredded or diced

12 blades fresh chives, chopped

Directions

  1. Heat a medium nonstick pan with butter over medium low heat.
  2. Whisk eggs with cream and salt and pepper. Scramble eggs soft only, stir in cheese and chives and continue to cook a minute more then serve.

I made these with her entire "Irish Breakfast" menu and they were the star of the show!! My husband was very impressed with how fluffy and delicious they were. The Irish butter and cheese were $13.00/lb at my store, so only bought 1/2 pound of each. The butter definately made a difference, not sure the cheese did. I think we have some sharp cheddar here in the US that would have been just as good. Yes, it is a very simple egg recipe, but it is very good and goes well with her Irish menu! Good job Rachel!
