Green Beans and Stewed Tomatoes

Ingredients

1 large bag (18 ounces) whole frozen green beans

1 (14-ounce) can stewed tomatoes

2 scallions, chopped

Extra-virgin olive oil, for drizzling, about 2 teaspoons

Salt and pepper

Directions

  1. In a microwave safe bowl, combine beans and stewed tomatoes, scallion and a drizzle of extra-virgin olive oil. Loosely cover bowl with plastic food storage wrap and microwave on high 5 minutes, stir and microwave on high 2 minutes more. Season with salt and pepper, to taste and serve.

I pre cooked the green beans and then added to the stewed tomatoes. One of my comfort foods is stewed tomatoes when we have Mac and cheese, and this way we had greens too!
