Lemon Chive Noodles

Ingredients

Salt

1 pound whole-wheat fettuccine or pappardelle noodles

2 cups chicken stock

1 tablespoon extra-virgin olive oil

2 lemons, zested and sliced

1/2 cup tamari sauce

1 bunch chives, chopped into 1-inch lengths

Freshly ground black pepper

Hot sauce, optional

Directions

  1. Bring a large pot of salted water to a boil add the pasta and cook until just shy of al dente. Drain.
  2. While pasta water comes to a boil, heat the stock, oil, sliced lemon and tamari sauce and allow to reduce over medium-high heat, about 7 to 8 minutes. Toss cooked pasta with sauce for 1 to 2 minutes to absorb flavor, add in reserved zest and chives then serve as first course or a side dish. Spice it up with pepper or hot sauce to pass at table.

I saw this in a commercial and thought it would be a nice summer meal, not too heavy. It was the tamari sauce that really threw me off. I'm not a huge soy sauce fan so 1/2 cup is A LOT of soy sauce. After adding that it no longer looked right and had a horrible concentrated soy smell the entire time it was cooking. My fiance and I both decided to give it a try but we were pretty sure pizza was going to be the menu for dinner instead. But, I was wrong.<br /><br />It's still not the best thing I've ever eaten but it was actually much better than it smelled and the lemon drowned out the soy sauce, lemon was a bit much actually. I ended up just spooning some of the sauce over the noodles in a bowl and mixing it instead of stirring into all the sauce. I also made grilled chicken to go along with it and added parmesan shavings which helped with flavor. <br /><br />If we try it again I will be using a quarter of the tamari sauce, half the lemon, and adding a lot more flavor with garlic and more parmesan cheese.
