Cajun Shrimp Cocktail

Ree has reinvented the shrimp cocktail for her party entertaining. Normally, shrimp cocktails are served cold with a ketchup based cocktail sauce. This Cajun version is served hot and the sauce is creamy. Ree likes to prepare this dish in front of her guests while chatting over a glass of wine.

Ingredients

4 tablespoons salted butter

1 cup tartar sauce

2 teaspoons prepared horseradish

1 1/2 pounds jumbo shrimp, peeled, deveined, tails on

1 tablespoon Cajun seasoning

Kosher salt and freshly ground black pepper

6 cloves garlic, minced

4 green onions, sliced

2 tablespoons chopped fresh parsley

1 lemon, juiced, plus 1 lemon, sliced

Directions

  1. Heat the butter in a large skillet over medium heat.
  2. In a small bowl, mix the tartar sauce and prepared horseradish. Set aside.
  3. Toss the shrimp with the Cajun seasoning, salt and pepper. Add the shrimp to the skillet and move into a single layer so that each shrimp is touching the base of the skillet. Add the garlic and most of the green onions, then cook, undisturbed, for 2 to 3 minutes. Toss and cook until the shrimp are opaque and cooked through. Remove the skillet from the heat and add the parsley and lemon juice. Toss to combine, then transfer to a serving platter. Garnish with the remaining green onions and lemon slices. Add the bowl of sauce to the platter with a spoon so everyone can enjoy.
