Cheesy Crunchy Noodle Casserole

Ingredients

Kosher salt and freshly ground black pepper

8 ounces egg noodles

1 1/4 cups small-curd cottage cheese

1/2 cup sour cream

1 cup grated sharp Cheddar

1/2 cup sliced green onions, plus more for garnish

2 cups crushed potato chips

Directions

  1. Preheat the oven to 375 degrees F. Bring a large pot of salted water to a boil.
  2. Cook the egg noodles until al dente as per the package directions. Drain and set aside.
  3. In a medium bowl, combine the cottage cheese and sour cream. Add plenty of freshly ground black pepper. Add the noodles and stir. Add the Cheddar and green onions, then stir.
  4. Add the contents of the bowl to a 9-by-13-inch baking dish and bake for 15 minutes. Remove and top with the potato chips. Return to the oven and bake until golden, another 5 minutes.
  5. Garnish with green onions, then serve.

After watching Ree make this on tv my husband was amazed, and asked me to make it. After making a special trip to town to be sure I had the right noodles, I got it assembled according to directions. The presentation was nice, but it wasn’t that tasty. I had so much left over, that we ate it for three days! Sorry, but it was flavourless and not very tasty. Will not make this again. <br />The pork tenderloin and bacon jam however was delicious!! I cooked it on the BBQ, because I have a no fail method for it. Besides less mess on the stove. We really enjoyed it. Will definitely make the pork again!
