Chocolate Fondue

Ingredients

2 cups heavy cream

6 ounces bittersweet chocolate, chopped 

6 ounces semisweet chocolate, chopped 

3 tablespoons amaretto 

1 teaspoon vanilla 

Dipping suggestions: cubed angel food cake (store-bought is fine), pineapple chunks, dried apricots, green grapes, blueberries and blackberries

Directions

Special equipment:
a fondue pot
  1. Heat the cream in a saucepan over low to medium heat until warmed through but not bubbling; add the bittersweet chocolate, semisweet chocolate, amaretto and vanilla and stir until the chocolate is melted. Pour the mixture into a fondue pot.
  2. Arrange your dipping ingredients on a platter and serve!

I had no problems with the chocolate to cream ratio as noted by two other recipes. I hadn't done fondue in years. Since I have 4 fondue pots (2 electric and 2 regular) I decided to make a night of fondue and do cheese fondue and beef fondue as preludes to the chocolate fondue. I cut my angel food cake about half the size Ree used. Also, my strawberries were huge so I cut them in half. Some of my kids are younger so had to caution them to put dipped pieces on plate and use regular forks to transfer dipped food to their mouths. Fondue forks are so sharp that I didn't want to risk them piercing tongue or cheeks with the sharp fondue forks. If you have more than 4 in your family, or a larger table, you may need multiple pots so that all can get to the fondue pots. Also, next time I will use a plastic tablecloth rather than a regular cloth because we had drips from the kids going from the pot to their plates.
