Roasted Garlic

Ingredients

8 large garlic bulbs

1 to 2 tablespoons olive oil

Pinch kosher salt

Pinch black pepper

Directions

  1. Preheat the oven to 375 degrees F.
  2. Cut the top quarter off the top of the garlic bulbs. Place them in a pie pan and drizzle the tops with the olive oil. Sprinkle with salt and pepper. Cover them with foil and bake until the garlic is roasted and soft, about 45 minutes.

Doesn’t get any easier. So many uses for roasted garlic. Perfect thing to do when you pick up a huge bag of fresh garlic from Sams and can’t use it all before it spoils. I freeze the roasted garlic in a mini muffin tin and pop out the frozen discs and vacuum sealed them. Easy to throw into whatever recipe you’re making. Pull out a disc or two, reseal the bag, and they’ll last practically forever.
