Rice Vinegar and Sesame Vinaigrette

Ingredients

1/2 cup unseasoned rice vinegar

2 tablespoons mirin (Japanese sweet cooking sake)

1 teaspoon toasted sesame oil

2 teaspoons sugar

1 teaspoon finely minced shallot or green onion

Salt and pepper

Directions

  1. Whisk all ingredients until sugar is dissolved. Store covered in refrigerator up to 1 week.
