Cilantro-Garlic Potatoes

Ingredients

2 tablespoons extra-virgin olive oil

1/3 cup diced red onion

1/4 cup real bacon pieces

1 (16-ounce) bag pre-cooked and diced red potatoes

1 1/2 teaspoons crushed garlic

Salt and pepper

1/4 cup chopped cilantro leaves

Directions

  1. In a large skillet, heat oil, over medium-high heat. Add red onions and bacon pieces. Saute until onion is soft, about 2 to 3 minutes. Add potatoes and garlic. Cook 5 to 7 minutes, stirring occasionally. Season, to taste, with salt and pepper. Stir in cilantro and serve hot.

Cilantro is a controversial flavor. Some people find it tastes like soap. This recipe could have included the suggestion to use parsley or perhaps rosemary instead for those who don't like cilantro. Additionally, as many commenters have already observed, those frozen potatoes are sub-standard in texture and not too great in flavor, either. Substituting fresh potatoes for people who prefer decent potatoes, and anything for cilantro for those who are predisposed to hate cilantro creates a completely different dish. Since I made this substituting as previously stated (not to mention using freshly made bacon bits), I can't in good conscience give this more than one star.
