Creamy Red Potato Salad

Ingredients

2 tablespoons sliced green olives with pimento

2 teaspoons capers

1 rib celery, finely chopped

1/4 cup finely chopped red onion

3 tablespoons mayonnaise

1 teaspoon apple cider vinegar

1 teaspoon lemon herb seasoning (recommended: McCormick)

2 tablespoons freshly chopped parsley leaves

3 hard boiled eggs, chopped

1 (16-ounce) bag pre-cooked and diced red potatoes (recommended: Reser's)

Directions

  1. Combine all ingredients in a large bowl. Stir to combine. Serve immediately.

Well, the other reviews scared me from trying the precooked potatoes, so I went ahead and bought 4 large red potatoes and cooked them myself. <br /><br />With the fresh potatoes, I found this salad to be delicious! It has a tangy flavor that is unique, and I don't know why some people say it's not salty enough. I think it has plenty of sodium from the capers. <br /><br />I actually hate olives and celery, so I left both of those out, and instead added a minced clove of garlic. So good!<br /><br />Next time I think I'll add some crumbled bacon to make it even better. I think as long as the potatoes are fresh, it makes a very good potato salad!
