Orange Glazed Salmon

Ingredients

1 1/2 pounds salmon fillet

1/3 cup orange marmalade

1/2 cup orange juice

1 tablespoon Dijon mustard

1 teaspoon ginger

2 teaspoons salt free citrus-herb seasoning

Directions

  1. Rinse salmon fillet under cold water and pat dry with paper towels. Cut into 6 serving portions and place salmon fillets in a large zip-top bag; set aside.
  2. In a small bowl stir together remaining ingredients. Pour into zip-top bag. Squeeze air from bag and seal. Marinate in refrigerator for 1 to 2 hours.
  3. Remove salmon from refrigerator 30 minutes before cooking, and bring to room temperature.
  4. Light broiler and line baking sheet or broiler pan with aluminum foil.
  5. Remove salmon from marinade and place on baking sheet. Discard marinade. Broil salmon 6 to 8 inches from heat source for 6 to 8 minutes or until cooked through. Do not overcook.
  6. Serve immediately.

I admit my husband and I like our proteins REALLY marinated, but I marinated the salmon for the full two hours, and it barely tasted of the marinade at all. I was disappointed because I couldn't find the Spice Islands Citrus & Herb Seasoning anywhere locally or online. So I found a recipe for it and bought all the separate ingredients to make it. I'm not an expert at marinating fish, but next time I'm going to try 3-4 hours. I think it's worth a next time. If the citric acid in the orange juice "cooks" the fish, I guess we just have orange flavored ceviche.
