Spiked Mulled Apple Cider

There are so many things I love about this recipe. For one, it makes my house smell so cozy and delicious. It's also a “set it and forget it” recipe. (I love those!) And, I can make it ahead and serve it to a crowd — with or without the rum added.

Ingredients

8 cups unfiltered apple cider

1/3 cup firmly packed light brown sugar (see Cook’s Note)

1 tablespoon whole allspice

Five 4-inch cinnamon sticks, plus more for serving

3 pods star anise

2 teaspoons whole cloves

One 2-inch piece fresh ginger, peeled and smashed

1 large orange, cut into quarters

1 to 1 1/2 cups dark rum

1 Granny Smith apple, sliced crosswise; seeds removed

Directions

  1. Combine the apple cider, brown sugar, allspice, cinnamon sticks, star anise, cloves, ginger and orange in a large saucepan. Bring to a simmer over low heat. Cover and simmer (do not boil) for 1 hour, stirring occasionally.
  2. Strain the cider through a wire mesh strainer into another saucepan. Stir in the rum. Ladle the cider into serving mugs and garnish with apple slices and cinnamon sticks.

Cook’s Note

If a sweeter cocktail is desired, add 1/3 cup brown sugar.
