Stovetop Baked Beans

Country music group Little Big Town's Kimberly Schlapman shares her recipe for Southern-style baked beans that don't require baking.

Ingredients

4 slices bacon, diced

1 cup diced onions

1/2 green bell pepper, diced

Two 28-ounce cans pork and beans

1/4 cup ketchup

1/4 cup molasses

3 tablespoons apple cider vinegar

2 teaspoons hot sauce

1 1/2 teaspoons dry mustard

1/4 teaspoon black pepper

Salt

Chopped red onions, for serving

Directions

  1. Cook the bacon in a heated cast-iron pan until the fat starts to render. Add the onion and green bell peppers. Cook until the vegetables are soft, about 5 minutes. Add the pork and beans, ketchup, molasses, vinegar, hot sauce, dry mustard and pepper. Stir to combine. Bring the beans to a simmer. Simmer over low heat for 30 to 40 minutes until thick. Add salt to taste. 
  2. Serve hot, topped with chopped red onions.

Loved this recipe on the 4th of July. Before I started my day drinking or went out on the pontoon. Loved the twang of the vinegar the best. It brought it on home for me. I’ve got a bean crush. The recipe will stay.
