Tea Cakes

Ingredients

6 cups flour

1/2 teaspoon baking powder

6 eggs

3 cups sugar

1/2 pound butter, at room temperature

1/2 cup vegetable shortening, at room temperature

1 1/2 tablespoons lemon extract

1 1/2 teaspoons ground nutmeg

1/2 cup water

Directions

  1. Preheat oven to 300 degrees F.
  2. In a large mixing bowl, combine flour, baking powder, eggs, sugar, butter, shortening, lemon extract, nutmeg and water. On a floured surface, roll out the dough to 1/2-inch thickness. Cut with a 2 1/2-inch circle biscuit cutter.
  3. Place on a greased baking sheet. Bake in oven for 15 to 25 minutes, or until slightly golden on the edges. Serve.

Just attempted to make these. Followed directions closely...double-checked measurements. i wound up with a dough that was MUCH too soft to handle. Dealt with it...and was able to make about 3/4 of the recipe. put the remainder of the dough into the frig for about half an hour. It was much easier to handle. Cookies we sort of bland as well. I am sorry...but I wouldn't recommend this recipe to anyone.
