Toby's Honey Chicken

Ingredients

2 1/2 pounds skinless, boneless chicken breasts cut into small strips

2 1/2 cups panko bread crumbs

1/2 cup honey

2 tablespoons apricot preserves or jam

4 tablespoons raw sesame seeds

Directions

  1. Preheat oven to 350 degrees F. Place sesame seeds in a frying pan over medium heat and toast for 3 to 5 minutes or until seeds are golden brown. In a small bowl, combine honey and apricot preserves. Stir to combine. Brush honey mixture on both sides of chicken strips, dredge in bread crumbs and sprinkle with sesame seeds. Line coated chicken on a baking sheet coated with nonstick cooking spray. Bake 20 minutes on each side until slightly browned.

Easy to prepare --a hit in our house! I found that after mixing the honey and preserves together, I stir in the chicken and let it sit for 5 minutes. In a separate bowl I have the breadcrumbs. Rather than drag the chicken thru, I fold the honey covered chicken. I sprinkle a little italian seasonings on top for flavor before baking. Our teenaged kids and their friends love it! Leftovers if any are after school snacks!
