Turkey and Bacon Chili

Ingredients

1 tablespoon vegetable oil

4 pounds ground turkey

2 large onions, chopped

3 cloves garlic, crushed

2 cups chicken stock

1 cup hot sauce, such as Frank's Hot Sauce

1/2 cup canned chipotles, diced

1/4 cup tomato paste

3 tablespoons chili powder

1 teaspoon ground cumin 

1 pound bacon, cooked and chopped

Salt

1 ripe avocado, sliced

Tortilla chips, for serving

Directions

  1. Heat the oil in a large pot over medium heat. Add the turkey and cook until the color changes, about 5 minutes. Next add the onions and cook till translucent. Then add the garlic and cook for another 2 minutes. Next add the stock, hot sauce, chipotles, tomato paste, chili powder and cumin. Cook it on very low heat, covered, for about 40 minutes. Add three-quarters of the bacon, saving one-quarter for garnish, and cook for an additional 20 minutes, uncovered. Add salt if needed. Serve topped with the chopped bacon and sliced avocado with tortilla chips.

I decided to make this chili for a chili cook off because it sounded like a unique spin on traditional chili, and I had all these ingredients on hand (thanks to Costco!) I placed second with this chili! Everyone really really enjoyed it and I got a LOT of compliments! The chili is a wee bit on the spicy side (because of the 1 cup of Frank's Red Hot sauce), but not like fire hot. I added a few twists to it: first I added a can of sweet corn to it to cut the spicy-ness of the chili, and I added a can of kidney beans to keep the chili feel. I also used 4 cups of chicken stock and added a tbsp of ancho chili powder and used 1 heaping tbsp of cumin instead of the tsp. This chili is full of flavor!! Highly recommended!! I will definitely be making this again and again!
