Turkey Cutlets: Chuletas de Pavo

Ingredients

2 cups finely chopped red onion

1/2 cup finely chopped cilantro

1/2 cup finely chopped parsley

1/4 cup red wine vinegar

1 cup olive oil

1 (6 pound) turkey breast

Directions

  1. In a small bowl, combine the onions, cilantro, parsley, red wine vinegar, and olive oil.
  2. Remove the backbone from the turkey breast, keeping both sides intact. Cut the breast into 2-inch steaks. Place the turkey cutlets into the marinade, cover, and marinate overnight in the refrigerator.
  3. Heat a grill.
  4. Grill the turkey cutlets until cooked and still juicy, about 5 to 6 minutes per side.
