Mixed Baby Greens With Mustard Vinaigrette

Ingredients

1/2 small shallot, chopped

1 tablespoon dry mustard

3 tablespoon red wine vinegar

Salt and pepper

2/3 cup extra-virgin olive oil

1 pound mixed baby greens, rinsed and spun dry

Directions

  1. In a bowl, combine the shallot, mustard, vinegar and season with salt and pepper. While whisking, drizzle in the olive oil.
  2. Pour vinaigrette over the greens, tosses and serve immediately.

The vinaigrette was so easy to make. The red wine vinager was a little strong at first so I added a touch of honey to sweeten out the final product. I used the vinaigrette as a dressing for a warm potato salad. So good!
