Chewy Schmaltz Oatmeal-Raisin Cookies

Ingredients

1 cup all-purpose flour

3/4 teaspoon ground cinnamon 

1/2 teaspoon baking soda 

1/4 teaspoon baking powder 

1/4 teaspoon kosher salt 

1/8 teaspoon ground cloves 

1/3 cup schmaltz (rendered chicken fat), at room temperature 

4 tablespoons unsalted butter, at room temperature 

1 cup packed light brown sugar 

1 large egg 

1 teaspoon vanilla extract

1 1/2 cups rolled oats 

1 cup raisins 

Directions

  1. Whisk the flour, cinnamon, baking soda, baking powder, salt and cloves together in a small bowl.
  2. In a large bowl, beat the schmaltz, butter and brown sugar together with an electric mixer on medium-high speed until light and well blended, about 3 minutes. Add the egg and vanilla, and beat until combined. Add the flour mixture and beat until just incorporated. Stir in the oats and raisins. Refrigerate the dough until cold, at least 1 hour and up to overnight.
  3. Preheat the oven to 350 degrees F.
  4. Scoop heaping, well-packed tablespoons of dough 2 inches apart onto 2 ungreased baking sheets.
  5. Bake until the cookies are slightly golden at the edges but still a little soft on top, about 14 minutes. Cool on the baking sheets for 5 minutes, then transfer to a cooling rack to cool completely.

This is my first time using schmaltz. I had to go to 4 different grocery stores and finally found it at Whole Foods. It’s pricey too. $12.99/ jar. The cookies are delicious, however, my 4 instead of 5 star rating is because I feel that they need a little more flavor. Next time I will add more. cinnamon and cloves. I definitely will make them again.
