Limeade and Mint Soda

Ingredients

1 cup sugar

1 cup fresh mint leaves, plus 4 mint sprigs, for serving 

2 cups store-bought pure or freshly squeezed lime juice

Sparkling water, for serving 

Lime rounds, for serving 

Directions

Special equipment:
a muddler or a spoon
  1. Combine the sugar with 1 cup water in a medium saucepan and bring to a simmer over medium-high heat, stirring until the sugar has dissolved. Turn off the heat and add the mint leaves. Muddle with a muddler or the back of a spoon. Allow to cool completely, about 20 minutes. Strain and discard the mint leaves.
  2. Add the lime juice and 4 cups water to a large pitcher. Pour the simple syrup into the limeade. Stir to combine.
  3. To serve, pour the limeade into glasses filled with ice. Top with some sparkling water. Garnish each with a lime round and mint sprig.

Great recipe for the base of cocktails (added vodka) for book club this weekend. Would be good with rum as well. We made a picnic in the park, so the bar was limited to what I could pack in. Used lemons instead of limes and meant to bring lemon slices in the pitcher and mint sprigs for decoration, but ran out of time. Would be a great idea for next time. Will definitely make this again! I took the advice of Nancy P and doubled the simple sugar, but didn't use it all with the lemons from my tree.
