Yorkshire Puddings

Ingredients

2 tablespoons beef drippings 

6 ounces all-purpose flour 

6 ounces milk (whole or semi-skimmed)

4 ounces water

2 free-range eggs 

Salt

Directions

Special equipment:
a standard 12-cup muffin pan
  1. Preheat the oven to 425 degrees F.
  2. Pour the beef drippings into a muffin pan. Place the pan in the oven until the drippings are smoking hot. 
  3. Meanwhile, mix together the flour, milk, water, eggs and some salt and pepper in a bowl.
  4. Divide the batter among the muffin cups and return the pan to the oven. 
  5. Bake until golden brown and crisp, 25 to 35 minutes, depending on the oven.

I used 1/2 teaspoon of drippings per muffin cup. We used fairly large muffin tin of 6. Place in hot oven for 2 minutes, pull out & pour 1/2 of each cup, then back in oven for 34 minutes….This recipe is good for 6 large puddings… double it for 6 more.
