Yumm Taeng Kua: Classic Cucumber Salad

Ingredients

1 cucumber, peeled, halved lengthwise, seeded, and thinly sliced on the diagonal (2 cups)

1 whole scallion, minced

1/4 cup Dressing One, recipe follows

Dressing One:

1/2 teaspoon sea salt

1/4 cup fish sauce (namm pla)

2 tablespoons palm sugar or light brown sugar

1/4 cup granulated sugar

1/2 cup fresh lime juice

Directions

  1. Put the cucumber and scallion in a small mixing bowl and add the dressing. Mix well and let sit for 10 minutes before serving.

Dressing One:

  1. In a small saucepan, combine the sea salt, fish sauce, palm sugar, and granulated sugar and cook over low heat, stirring, just until the sea salt and sugar are dissolved. Remove from the heat and transfer to a mixing bowl to cool. When cooled completely, stir in the lime juice.

This is so good, I have made it many many times and everyone loves it. I slice the cucumber (English & do not peel and scallions and refrigerate separately - then put on dressing about 10 minutes before serving.
